Year 10's Afternoon Tea at The Athenaeum Hotel

Last Friday, our Year 10 Food and Nutrition students visited The Athenaeum Hotel in Mayfair, for an elegant afternoon tea!
Andy Fletcher, Head of People Experience at the Athenaeum Hotel, hosted two engaging workshops, the first being a Tea Blending Workshop.
The Athenaeum, renowned for its signature tea blends, offered students the chance to create their own custom tea. Led by the hotel’s Tea Connoisseur, the session began with a discussion about the students’ flavour preferences and taste profiles. Using their input, a personalised tea blend was crafted and later served alongside a classic afternoon tea of delicate sandwiches and patisserie.
Head Pastry Chef Seigal welcomed students into the kitchen to make a cold-set granola bite. He enhanced the recipe by incorporating dates and bananas for natural sweetness, then finished each disc with a dip in cacao. Chef Seigal also spoke about ingredient choices, dietary considerations, and allergen awareness, linking it all to the creation of teas and treats suitable for a 5-star hotel clientele.

Afternoon Tea Presentation
To conclude the day, students were treated to a beautifully presented afternoon tea, served on the hotel’s signature ornate stands. Chef Seigal guided them through the menu, the theme Summer flowers, highlighting the inspiration behind the selection of sandwiches and pastries, the ingredients used, and the culinary techniques involved.
